How a Three-Tier Lemon & Elderflower Cake Saved the Brennan-Murphy Reception

When Aoife Brennan rang us eleven days before her wedding, the original bakery had cancelled. She needed a showpiece cake for 140 guests — gluten-free for the groom's family, visually dramatic, and true to a palette of dusty rose and sage green.

Our head baker, Ciarán, spent the first two days on structural tests. Elderflower-infused Swiss meringue buttercream layered over a lemon sponge with a hidden raspberry curd centre. Each tier was individually supported to survive a July afternoon in a marquee with no air conditioning.

A Corporate Launch That Needed More Than Pastries

The Brief

Meridian Tech's Galway office wanted branded baked goods for a 200-person product launch. Not generic platters — they wanted each item to reflect their brand colours (teal and copper) and include their logo in edible form.

The Execution

We developed copper-dusted macarons with teal ganache, logo-stamped shortbread using a custom food-grade mould, and miniature carrot cakes in branded wrappers. Delivery was staged across three service windows during the event.

Tasting & Design Session

For celebration and wedding cakes, we arrange a tasting at the kitchen. You'll try three to five flavour combinations. We sketch together. No pressure, no hard sell.

Average tasting session: 45 minutes. Most clients leave with a clear direction.

Proposal & Confirmation

We send a written proposal within two working days. It includes a full breakdown: ingredients, timeline, delivery logistics, and pricing with no hidden fees. A 30% deposit secures your date.

Baking & Quality Checks

Every order goes through at least two internal tastings before it leaves the kitchen. For tiered cakes, we do a structural rehearsal. Nothing is left to chance.

Delivery or Collection

We deliver within a 45km radius of New Tara. For weddings and large events, our team handles setup on-site. Collection from the kitchen is always free.

A 30% non-refundable deposit is required to confirm any custom order. The remaining balance is due no later than 48 hours before the scheduled delivery or collection date. Cancellations made more than 7 days before the event date will receive a credit note for the deposit value, applicable to future orders.

We make every effort to match designs and flavours as agreed. Minor variations in colour, texture, or decoration may occur due to the handmade nature of our products. Delivery times are estimates; we are not liable for delays caused by circumstances beyond our control.
